Veloute, chicken Cordon Blue, & the Cyrus mallet lick


Here's today's dish we cooked in the culinary lab. Not sure where the blue comes from as nothing is blue or related to blue anything. Even made the rue for the veloute for an hour plus. You know chicken tenders are the tenderloins? Had no idea. Of course cooking class couldn't go with some silliness like homage to Miley Cyrus.
